Moonveil doesn't so much one-shot as insta-stagger a lot of enemies with the weapon art (the R2 version). A lot of tough enemies get staggered by one L2+R2 and then killed by the critical hit you can follow up with, and a good number of bosses get staggered in like two or three hits from it, too.The unsheathe attacks are just really good on moonveil. Because of that you can also use Sorcery as utility or primary means of damage in some situations.
